Remember last year, when we were celebrating putting 2020 behind us? The idea of 2021 was a beacon of hope to pull us from the illnness and uncertainty of the pandemic.
You may be laughing out loud at this point, but we still deserve to ring in 2022 in style. Perhaps not clustered in sequinned dresses and howling at the moon, the way our younger selves idealized, but hope does makes a better holiday - not to mention a healthier outlook on life.
Let us not forget the progress 2021 did present. Vaccines, boosters and mandates have taken this pandemic from being something to fear, to something to be inconvenienced by. That's not nothing. I'm currently in bed recovering from Omicron, but because I was vaccinated, there isn't any drama to report. I'm just looking forward to my quarantine ending and my well-deserved glass of Champagne.
And with that, I think we all deserve to take our New Years toasts us a notch. Or twelve notches. We've gotten through yet another year of the pandemic, inflation, and this strange new normal. We owe it to ourselves to toast to the future, and deliciously!
Three Champagne cocktails worth trying
Champagne Punch
Grab an elegant punch bowl for this - it's a crowd-pleaser!
What you'll need:

You can prep the night before, by combining the Triple Sec, blackberry brandy, Chambord, and pineapple juice in a large pitcher or punch bowl. Cover and store in the fridge for 4 hours to overnight.

To keep things fizzy, you wait to add the mixture to the ginger ale and Champagne just before serving, adding it all into a large punch bowl

Serve over ice and garnish with fresh raspberries, for a pop of color.
Pomegranate Sparkler
It's almost too simple!
What you'll need:
- Champagne or Prosecco
- Pomegranate juice
- Pomegranate seeds
What do do:
- Fill a Champage flute with 1/3 pomegrante juice
- Top with 2/3 Champagne or Prosecco
- Drop in some pomegranate seeds for garnish
The French 75
This drink is herbal, tart, and sophisticated!
What you'll need:
- 3 oz. of gin
- 2 oz. of fresh-squeezed lemon juice
- 1 oz. of simple syrup
- Ice
- Champagne, Prosecco or Cava
- Lemon twists, for garnish
What to do:
- In a cocktail shaker, combine the gin, lemon juice and simple syrup.
- Add some ice, cover, and shake until well-chilled.
- Strain the mixture and divide evenly into two champagne flutes.
- Top with chilled champagne, garnish with a lemon twist and serve.
